    This foolproof Roasted Garlic Mayo adds a little extra something to every dish -- you'll never use store-bought again! Spread some on crusty sourdough bread and pile on your favorite sandwich toppings, use it as a base for salad dressings, or layer in a creamy element to a dairy free dish. With the deliciously savory flavor of roasted garlic, you can't go wrong!

    Ingredient Notes

    • Egg: the fresher the better when it comes to this recipe. I use a free range egg and allow it to come to room temperature so that it emulsifies nicely with all the other ingredients. Don't worry about the raw egg -- all mayo is made with raw egg! Just store yours in the fridge for up to two weeks and you'll be good to go.
    • Avocado oil: I like to use avocado oil in my homemade mayonnaise recipe because it is really light, and whips up easily. You can also use olive oil, but it will impart a heavier flavor.
    • Roasted garlic: the key to this recipe is the roasted garlic -- prepackaged minced garlic just won't do the trick! Roasting the garlic gives a deeper caramelized flavor that takes this mayo to the next level. I mean, who doesn't love garlic?! I highly recommend roasting an extra bulb of garlic because you are going to want to eat it on everything. Alternatively, you can make it with this delicious Garlic Confit.

    Step By Step Instructions

    STEP 1: Preheat the oven to 400°F. Cut the top ¼ inch off of the bulb of garlic, exposing the cloves.

    STEP 2: Put the bulb of garlic on a sheet of aluminum foil that is large enough to wrap the entire bulb. Drizzle the bulb of garlic with the oil, then sprinkle with the salt and pepper.

    STEP 3: Wrap each bulb tightly in foil. Put the foil packets on a rimmed baking sheet and bake for 45 minutes, or until the garlic is fragrant and the cloves are tender and caramelized.

    STEP 4: Once the garlic has cooled, squeeze the cloves out of the bulb and mash them into a paste. 


    STEP 5: Starting with the lemon juice and ending with the avocado oil, put the ingredients, one at a time and in the order listed, in a wide-mouth pint-sized mason jar. Let the ingredients rest for 20 seconds or so.

    STEP 6: Insert an immersion blender into the jar, placing it all the way at the bottom. Turn it on high speed and leave it at the bottom of the jar for about 20 seconds. The mayonnaise will immediately begin to set up and fill the jar.

    STEP 7: When the mayonnaise is almost all the way set, slowly lift the immersion blender toward the top of the jar without taking the blades out of the mayonnaise. Then slowly push it back toward the bottom of the jar. Repeat this up-and-down motion a couple of times until the ingredients are well incorporated. 

    STEP 8: Gently mix in the garlic paste.

    • Storage: keep your mayo refrigerated and store for up to two weeks.
    • Switch up the flavor: I will always be on team garlic, but you can also add fresh dill to this Roasted Garlic Mayo. Customize the flavors with your favorite fresh herbs. Other variations include truffle mayo, sriracha mayo, pesto mayo, dijon mayo, honey mustard mayo, Buffalo mayo ... the combinations are endless! (How to Make Pesto)
    • Whole30 Mayo: As written, this is a whole30 compliant mayonnaise recipe.
    • Basic mayo: need a plain homemade mayo recipe? Easy! Just omit the garlic.
    • Make your own salad dressing: I love to use this Roasted Garlic Mayo as a base for my favorite homemade dressings. Try using it in Dairy Free Keto Ranch Dressing, Creamy Chive Keto Blue Cheese Dressing, Keto Russian Dressing, Keto Creamy Avocado Ranch Dressing, or Buffalo Ranch Dressing.
    • More garlic: add a little more garlic to some of my favorite sauces and dips. Try this Roasted Garlic Mayo in Keto Yum Yum Sauce, Remoulade Sauce, Keto Tzatziki Sauce, and in Spinach and Artichoke Dip. The toasty, caramelized flavor really adds a beautiful depth to each recipe!

    Which oil is best for mayonnaise?

    Other homemade mayo recipes will recommend canola, safflower, grapeseed, or other seed-based oils. These oils are highly inflammatory, which is why I recommend using avocado oil. Olive oil is a good alternative, but it has a stronger flavor.

    What's the difference between mayo and aioli?

    Aioli is traditionally made with emulsified olive oil and eggs. Nowadays, when you see aioli on a menu, it's typically a fancy mayo.

    How do you thicken homemade mayonnaise?

    My favorite way to make homemade mayo is with an immersion blender. It's super easy, keeps clean up to a minimum, and emulsifies the mayo very easily.

    This easy Grilled Corn Salsa strikes the perfect balance of sweet, salt, acid, and heat. Bursting with summer colors and flavors, and ready in less than 30 minutes. You'll want to put this salsa on everything: your favorite taco salad, rolled up into a burrito, or served as a fresh side at your next cookout!

    • Corn: sweet corn is the star of this recipe, adding a nice crunch! Buy it fresh and grill to add the perfect amount of roasty, charred flavor to complement and deepen the other flavors in this recipe.
    • Cojita cheese: this is a classic Mexican cheese that adds a delicious creamy element to the salsa without making it feel heavy. The flavor and texture are similar to feta.

    STEP 1: First, brush the corn cobs with 2 tablespoons of olive oil. Season generously with salt and pepper.

    STEP 2: Grill, turning every few minutes. The corn is ready when it's golden with slight char marks and cooked through, about 12 minutes.

    STEP 3: Let the corn cool and then cut the kernels off the cob.

    STEP 4: Next, add the remaining 2 tablespoons of olive oil, lime juice, lime zest, garlic, and cumin to a small bowl. Whisk to combine.

    STEP 5: To a large mixing bowl, add the corn, tomatoes, bell pepper, jalapenos, cotija, red onion, and cilantro. Toss to combine.

    STEP 6: Drizzle over the sauce and toss until the corn salad is evenly coated. Taste, and add additional salt and pepper, if desired. Serve with fresh lime wedges, tortilla chips and guacamole.

    • Grilling the veggies: do NOT overcook the corn. This will result in a chewy mushy texture, and nobody wants that. You can also slice the red onions, bell pepper, and jalapeno and throw them on the grill to deepn the roasted flavor.
    • Storage: store in the fridge for up to 5 days.
    • Serving suggestions: I like to make a flight of Grilled Corn Salsa, guacamole, and Pineapple Salsa as an appetizer, served with fresh tortilla chips. It also makes a great side dish along with this Cilantro Lime Cauliflower Rice. You can add this corn salsa to shredded pork tacos, wrap it up in a burrito or a burrito bowl, or serve as a side with this Green Chile Chorizo and Chicken Mexican Casserole or Chili Lime Chicken with Avocado Feta Salsa.     • Make it dairy free: to make this Grilled Corn Salsa recipe dairy free, simply omit the cotija cheese.

    Technically, yes, but I don't recommend it. The appeal of this Grilled Corn Salsa is, well, the grilling! The roasted flavor really compliments the sweetness of the corn, and using fresh corn is what gives the salsa a beautiful, crunchy texture.

    Does corn need to be boiled before grilling?

    If you're buying corn early in the season, you can blanch before grilling. Simmer the shucked corn in salted water for 3 to 4 minutes and immediately grill. Corn purchased at the peak of the season can go right on the grill.

    Is corn paleo?

    Corn is a grain, so it's not allowed on paleo or Whole30. If you're looking for a Whole30-compliant salsa, try this Pineapple Salsa.

    These Keto Lemon Glazed Donuts are light and fluffy, and full of bright, fresh lemony flavor. In less than 30 minutes and with minimal ingredients, these low carb, gluten free donuts are the perfect quick and easy sweet treat.

    • Blanched almond flour: I recommend using a blanched almond flour and sifting it, or using a superfine almond flour. It will give you a much smoother texture. (Try these Keto Chocolate Chip Cookie Dough Bites)
    • Coconut flour: Coconut flour is extremely absorbent, so it is important to measure it very precisely, or else it can really throw this recipe off.
    • Baking powder: If you are not a frequent baker, it is a good idea to make sure your baking powder is not expired. Old baking powder can drastically change the outcome of baked goods.
    • Almond milk: If you are not a fan of almond milk, you can sub heavy cream, coconut milk, or the nut milk of your choice.

    STEP 1: Add the eggs, butter, sweetener, almond milk, vanilla extract and lemon extract to a large mixing bowl. Beat until all ingredients are well combined. To a separate bowl, add the almond flour, coconut flour, and baking powder. Whisk to combine.

    Add the dry ingredients to the wet ingredients and mix until all ingredients are well incorporated.

    Divide the mixture between 6 wells of the prepared donut pan, filling each one ¾ of the way full. Bake for 20 to 25 minutes or until donuts are golden brown on the surface. Let cool completely before removing from the pan.

    • Donut Pans: A quality donut pan will make all the difference in the world when it comes to whether or not your keto donuts stick to the pan or not. (I recommend this one) Make sure to grease the pan very well.
    • Make them mini: Use a mini donut pan to double the amount of donuts this recipe makes.
    • Toppings: Top these keto lemon glazed donuts with some unsweetened shredded coconut, low carb sprinkles, fresh berries, candied lemon, or even some keto granola
    • Flavor combos: instead of lemon, try making this with fresh orange juice or lime juice. You can even mix things up and use a combination of all three for a delicious citrus glazed donut.

    A good rule of thumb is to substitute 1 cup of almond flour with ¼ of coconut flour and one additional egg for every ¼ cup of coconut flour. It may also be necessary to double the liquid called for in the recipe as well. If the mixture seems too dry, simply add more liquid, a little at a time until you reach your desired consistency. If your mixture is too wet, add additional coconut flour, mixing in 1 teaspoon at a time until you reach your desired consistency.

    Sweet, salty, crispy, caramelized, and delicious, this Keto Candied Bacon is made with only 4 ingredients, and ready in 30 minutes. Pair with coffee, enjoy as an any time snack, or serve on a burger for the perfect play on sweet and salty.

    Ingredients for Maple Brown Sugar Keto Candied Bacon
    • Bacon: this recipe makes 4 servings, about 4 slices of bacon each. That equates to 16 slices, or about a pound of bacon. I don't recommend using thick cut bacon, it'll result in a chewier texture and you won't get the crispy effect. (I get all my bacon here)
    • Brown Sugar Erythritol: you'll want to lightly pack your brown sugar erythritol as not to overpower the sweet to salty ratio. I like this brand, but you can use any 1:1 keto brown sugar sweetener (or even regular brown sugar if you're not worried about the carbs).
    • Sugar Free Maple Syrup: finding a sugar free maple syrup can be tricky -- you want something that matches the flavor, but doesn't have a lot of gunk. My favorite sugar free maple syrup is Lakanto; it's still a bit thinner than regular maple syrup, but the flavor is spot on.

    STEP 1: First, preheat the oven to 375°F. Line 2 large rimmed baking sheets with foil or parchment paper, and then place oven-safe wire racks onto each baking sheet.     Ready in less than 30 minutes, and made with minimal ingredients, these Chewy Marshmallow Chocolate Chip Cookies are the perfect marriage of a classic buttery chocolate chip cookie and ooey, gooey s'mores. Enjoy this campfire classic remade into the perfect fresh baked cookie!

    • Butter: To me, brown butter is how all of the best chocolate chip cookies start, and this recipe is no exception! Browned butter gives these cookies more depth of flavor, and adds a caramel-like undertone that pairs perfectly with the chocolate.
    • Brown sugar: Brown sugar is the key to chewy chocolate chip cookies. It is naturally moist and makes for a softer, chewier cookie. Whereas using all white sugar will produce a thinner, crispier cookie.
    • Mini marshmallows: I highly recommend making this recipe with high quality mini marshmallows, like this brand, or even homemade mini marshmallows.
    • Chocolate chips: the quality of your chocolate chips is also important! This is my favorite brand, and although I used the semi-sweet version in this recipe to cut down on the sweetness, you could also use milk chocolate chips.
    • Flour: use a high quality all-purpose flour for the best results. For a gluten free version, you can swap the flour for this gluten free baking flour.

    STEP 1: Heat butter in a small sauce pan over medium heat, stirring constantly until the butter turns golden brown. Remove it from the heat and let it cool. Add cooled butter, brown sugar, and granulated sugar to a large bowl and mix well to combine.

    STEP 2: Add eggs and vanilla extract to the bowl. Using a hand mixer or electric whisk, beat on low until fluffy.

    STEP 3: In a separate bowl, combine the flour, baking soda, and salt. Mix until well incorporated, then add the dry ingredients a little bit at a time to the wet ingredients, mixing as you add. Mix until all ingredients are well combined but not overworked. 

    STEP 4: Add in the chocolate chips.

    This Sparkling Hard Strawberry Lemonade is ultra refreshing and so simple to make. Perfect for a hot summers day, or for entertaining friends. With only 5 ingredients and less than 10 minutes of your time, you can be sipping on this light and fruity low carb cocktail recipe.

    Ingredients for Sparkling Hard Strawberry Lemonade- vodka, strawberries, lemons, sweet and sour, club soda
    • Strawberries: For this recipe, I used fresh strawberries, but frozen would work just fine. You can also use raspberries, blueberries, or blackberries. (more low carb cocktail recipes)
    • Lemons: If you do not have fresh lemons on hand, limes would also work. You could also substitute bottled lemon juice or lime juice.

    This Passion Fruit Mojito is light, and fresh, with the bright, tart flavors of passion fruit and lime. It is the perfect summer cocktail recipe and is great for entertaining friends.     This oven baked Spinach and Artichoke Dip is rich, creamy, and delicious. Made with just 6 main ingredients - fresh baby spinach, briny artichoke hearts, cream cheese, sour cream, mayo, and parmesan cheese. Seasoned with lots of garlic, salt and pepper. It's a classic party appetizer that is always a crowd pleaser. Best of all, it can be ready in less than 30 minutes.

    How to Make Spinach and Artichoke Dip

    STEP 1: Preheat the oven to 350°F. Add the cream cheese, Parmesan cheese, mayonnaise, sour cream, garlic, onion powder, and red pepper flakes to a bowl and mix until all ingredients are well incorporated. 
    STEP 2: Gently fold in the artichoke hearts and spinach. Taste, and add salt and pepper, as desired.
    STEP 3: Transfer the mixture to a casserole dish, or individual ramekins. Bake for 25 to 30 minutes or until the top is golden brown and bubbling.
    STEP 4: Remove from the oven and garnish with cracked black pepper and spinach.

    • Storage: Store leftovers, covered in the refrigerator for up to 4 days.
    • Reheating: This can be reheated in the oven or the microwave. Reheating in the oven will help crisp up the top.

    Sushi night at home just got a lot easier with this California Roll in a Bowl recipe. All the fresh and light flavors of a California roll, but in a deconstructed bowl version. Best of all, it can be made in less than 30 minutes and can be made keto, paleo, and even whole30

    • Lump crab meat: California rolls are traditionally made with imitation crab meat, but I prefer the real thing. It is delicious both ways. (more crab recipes)
    • Furikake: This is Japanese rice seasoning (see note below). If you do not have any on hand, you can use black and white sesame seeds and crumbled dried seaweed snacks instead. (get it here)
    • Sushi rice: this is typically a short grain rice that is seasoned with a mixture of vinegar, salt and sugar.
    • Dried seaweed snacks or nori: You can use either for this recipe. I used a wasabi flavored dried seaweed snack and sliced it into strips. But you can also use a nori sheet.
    • Soy sauce: If you do not eat soy, you can substitute coconut aminos. This is my favorite brand.

    How to make a California Roll in a Bowl

    1. Whisk together the rice vinegar, sugar and salt. Add the cooked rice to a mixing bowl and pour the vinegar mixture over top. Toss to mix. 
    2. Divide the rice between two bowls. Arrange half of the crab, avocado, seaweed, cucumber, and carrots on top of each of the bowls. Alternatively, you can mix up all of the ingredients before placing them on top of the rice.
    3. Drizzle some Yum Yum sauce over the top and then sprinkle on the furikake.

    Serving Suggestions and Substitutions

    • Make ahead: This California Roll in a Bowl recipe can definitely be made ahead of time. I would just recommend keeping all of the ingredients separate and then arranging the sushi bowls when you are ready to serve.
    • Seafood: Instead of the crab, you can make this California Roll in a Bowl with fresh sushi grade salmon or tuna also. Better yet, use all three.
    • Spicy mayo: Instead of using Yum Yum Sauce, you can mix up some sriracha and mayo for a spicy mayo topping. Wasabi mixed with mayo is also a great choice.
    • Make it keto: Make this a keto sushi recipe by using steamed or sautéed cauliflower rice in place of the sushi rice and sweetener in place of the sugar. Simply sauté the cauliflower rice until it is tender and then toss it in the vinegar, sweetener mixture.     This edible Keto Chocolate Chip Cookie Dough is rich and delicious, making it the perfect low carb dessert recipe. Best of all, it is egg free, sugar free, and gluten free and only takes 10 minutes to make.

    Ingredients for cookie dough bites - almond flour, coconut flour, chocolate chips, vanilla, sweetener
    • Almond flour - I recommend using a blanched or super fine almond flour for this keto chocolate chip cookie dough. It more closely resembles a traditional flour based cookie dough. (more keto cookie recipes)
    • Monk fruit - This is my low carb sweetener of choice. In my opinion, it most closely resembles sugar. It doesn't have a weird aftertaste or cooling effect like many other sweeteners. This is my favorite brand (code PEACE for 20% off)
    • Butter flavored coconut oil - If you can't have dairy or are vegan, this is an excellent plant based substitution for butter. It adds that rich, buttery flavor you would expect from regular butter (I use this brand)
    • Almond milk - to make this edible keto cookie dough dairy free, I used almond milk. You can also use coconut milk, or any milk alternative you prefer. If you are not concerned with keeping it dairy free, heavy cream and half and half are also great choices.

    How to make edible keto cookie dough

    STEP 1: Add the almond flour, coconut flour, sweetener, and salt to a large bowl. Whisk until there are no visible clumps and the ingredients are well combined. 
    STEP 2: Add the wet ingredients (almond milk, melted butter, and vanilla) to the dry ingredients. Using a rubber spatula, mix until all ingredients are well incorporated. The texture should be thick like a traditional cookie dough - if necessary you can add a splash of almond milk if it is too dry, or additional coconut or almond flour to thicken it up.
    STEP 3: Gently fold in the chocolate chips.
    STEP 4: Scoop or roll the dough into 20 evenly sized cookie dough balls, about 1 ½ inches. Refrigerator for 30 minutes before serving.

    These Homemade Garlic Parmesan Croutons are well seasoned and perfectly crunchy. They are made with only 5 ingredients - Italian bread, olive oil, garlic, Parmesan, parsley, and can be made in only 15 minutes. They are the perfect addition to soups and salads.

    • Bread - For this recipe, I used a loaf of Italian bread. But you can use any bread you prefer. I also love to make them with a loaf of fresh sourdough. (I get all my breads here) code peace for 10% off
    • Olive Oil - I recommend using a light olive oil for these Garlic Parmesan Croutons. You can also use avocado oil or melted butter.
    • Parsley - Fresh is best when it comes to herbs. However, if all you have on hand is dried parsley, simply reduce the amount to 2 teaspoons.
    • Parmesan Cheese - I recommend using a freshly shredded Parmesan. But if all you have on hand is the kind in the green can, that will work also.

    This Pepperoni Caprese Pasta Salad is made with curly cavatappi pasta, pepperoni, fresh cherry tomatoes, herbaceous basil, fresh mozzarella and a tangy Italian vinaigrette dressing. It is the perfect quick and easy spring and summer salad. Perfect for summer barbecues. Best of all, it can be ready in only 15 minutes.

    • Pasta - For this Pepperoni Caprese Pasta Salad recipe, I used cavatappi noodles. However, you can use any pasta you prefer. Below, I have listed some of my favorite pastas for pasta salad. (More salad recipes)
    • Fresh Mozzarella - I use mini marinated mozzarella balls for this recipe, but you can cut up regular fresh mozzarella or even use shredded mozzarella

    These Crispy Air Fryer Potato Wedges have all the crispiness of deep fried potatoes, but without all the excess oil. With less than 5 ingredients and just 20 minutes of your time, you will have the perfect side dish or appetizer.

    • Russet potatoes - while russets work best for getting these Air Fryer Potato Wedges nice and crispy, you can also use red potatoes, Yukon Gold or even sweet potatoes. (more sweet potato recipes)
    • Avocado oil - this is my favorite mild flavored, high heat cooking oil. You can use any of your favorite cooking oils, or even melted butter for this recipe.
    • Herbs and spices - garlic, onion, paprika, salt, and pepper are pretty standard spices for potato recipes, but you can omit any of these to customize the flavors to your liking. (check out my homemade spice blend recipes)

    How to make air fryer potatoes

    STEP 1: Soak the potatoes in a bowl of water for 30 minutes. Doing so will get rid of excess starches and help the potatoes crisp up when air frying. Drain the water and dry thoroughly.

    STEP 2: Put the potato wedges in a large bowl and drizzle over the avocado oil. Toss until all of the potato wedges are evenly coated.

    STEP 3: In a small bowl, combine the garlic powder, onion powder, salt, paprika, and pepper.

    STEP 4: Sprinkle the spice mixture over top of the potatoes and toss until evenly coated.

    STEP 5: Heat the air fryer or convection oven to 400°F. Place the potato wedges in the basket of your air fryer, or on the tray, depending what type of air fryer you have. You may need to cook these in batches.

    STEP 6: Cook for 10 to 12 minutes, flip the wedges, and cook for an additional 5 minutes, or until cooked through and crispy. Garnish with thyme and red pepper flakes, if using.

    Are convection ovens the same as air fryers?

    If you have a convection or true convection setting on your own, this is essentially the same as having a huge air fryer. An air-fryer is not actually frying food, it is cooking the food with convection baking. However, because air fryers are much smaller than ovens, they can cook the same amount of food in a shorter time. This is the air-fryer I have.

    Will this recipe work for crispy air fryer french fries?

    Yes, absolutely. The only change you need to make is cutting the potatoes into French fry shapes, as opposed to wedges.

    This quick and easy Pepperoni Flatbread Pizza recipe comes together in about 10 minutes, can be customized with any of your favorite pizza toppings and is the perfect kid-friendly dinner. How can you go wrong with crispy pepperoni, melty Mozzarella, homemade marinara sauce and fresh basil?

    Ingredients

    • Flatbread - This is a quick and easy alternative to making your own pizza crust. There are a lot of different brands that make pre-packaged flatbread. Stonefire is one of my favorites. You can usually find the flatbread by the regular bread, next to the tortillas, or in the deli. (more pizza recipes) For a low carb option, try my Fathead pizza crust, or my nut free keto pizza crust.
    • Pizza sauce - I used my homemade Paleo Pizza Sauce recipe for this, but feel free to use your favorite jarred sauce.
    • Mozzarella cheese - for this I used a pre-shredded mozzarella cheese, but it is also delicious with fresh sliced mozzarella

    STEP 1: Preheat the oven to 375°F. Place the flatbreads on a baking sheet and brush with olive oil. Sprinkle on the onion powder and garlic powder. Bake for 5 minutes or until the bread starts to brown just slightly.
    STEP 2: Remove from the oven and spread the pizza sauce across the bread in an even layer. 
    STEP 3: Top with mozzarella cheese and pepperoni and bake for 5 minutes, or until the pepperoni starts to get crispy and the cheese is nice and melted. 
    STEP 4: Top the flatbread pizzas with fresh basil and red pepper flakes, before serving.

    Keto Tzatziki Sauce

    This Keto Tzatziki (cucumber sauce) is super simple to make and uses basic ingredients that you probably already have in your refrigerator. It pairs perfectly with Mediterranean flavors and just about everything else, too—chicken, fish, beef, you name it! It makes a terrific salad dressing.

    Ingredients

    • Sour cream and mayo - since Greek yogurt is high in carbs, these are used instead in order to make this a keto tzatziki. Try my homemade mayo recipe.
    • Lemon juice - if you do not have any lemons on hand, you can add a little white vinegar, or even apple cider vinegar.
    • Garlic and herbs - fresh is always best, but if necessary you can substitute dried herbs. Just reduce the amount by ⅔. One tablespoon of fresh herbs is equal to 1 teaspoon of dried herbs in terms of potency. Instead of fresh garlic, you can add garlic powder, to taste.

    • Storage - This is best eaten right away. I don't recommend storing leftovers.
    • Make ahead - This salad is best served immediately. If not possible, prepare the salad as directed, leaving out the melon and peaches. Keep in the fridge, covered. Add the peaches and melon right before serving.
    • Meat swaps - Any salty cured meat will work. Some of my favorites are pancetta, capicola, and salami.
    • Lettuce substitutions - if you do not like the spiciness of arugula, you can use any lettuce you prefer. I also like to make this with a mix of little gem and Bibb lettuces.
    • Mix up the herbs - fresh mint makes an excellent substitution for the basil. If using mint, I would start with ¼ cup and add more according to personal preference.
    • Melon options - honeydew makes a great swap for the cantaloupe. A mix of both is amazing also. You could even use watermelon.
    • Change up the cheese - If you are not a fan of feta, crumbled goat cheese and blue cheese are also excellent choices.

    I like to keep it simple with a light vinaigrette. Mixing olive oil, balsamic (or apple cider vinegar) and a little salt and pepper.

Alternatively, you can also use other types of bread (sourdough, French, ciabatta, etc.) Spread the bread cubes on a baking sheet lined with parchment paper.     This Naan Breakfast Pizza is a quick and easy kid-friendly breakfast recipe. Best of all, it is on the table in less than 15 minutes. You can even make them ahead of time and freeze them for a fast, heat and eat breakfast. Mix and match it with any of your favorite breakfast meats and cheeses.

    How to make Naan Breakfast Pizza

    Step 1 - Preheat the oven to 350°F. Spread 1 tablespoon of the butter across the naan bread (or low carb pizza crust) and sprinkle over the onion powder and garlic powder. Bake for 5 to 10 minutes or until the butter is melted and the bread starts to brown just slightly. While the naan is in the oven, whisk together the eggs and the heavy cream. 

    Step 2 - Heat the remaining tablespoon of butter in a non-stick skillet over medium-high heat. Pour the eggs into the skillet and cook until scrambled, but still soft and a little runny. Mix in half of the bacon and cheese. Taste and add salt and pepper, if desired

    Step 3 - Transfer the eggs to the naan bread, covering the bread evenly.

    Step 4 - Top with remaining cheese and bacon, and bake for 5 minutes or until the cheese is melted.

    These oven baked Greek Chicken Meatballs are tender, juicy, and loaded with the fresh flavors of mint, parsley, dill and onion. They have minimal ingredients and can be on the table in less than 30 minutes. They are delicious served with a traditional tzatziki sauce.

    Ingredient Notes

    • Ground chicken - If you can't find ground chicken, you can use boneless, skinless chicken breasts or thighs and pulse them in the food process until the meat is ground and formable. (more chicken recipes)
    • Feta cheese - To make this a dairy free recipe, you can omit the feta. If you are not a fan of feta, you can add any cheese you prefer. While not traditional, these are also delicious with goat cheese, sharp white cheddar, or even parmesan.
    • Breadcrumbs - This is to help hold the meatballs together. Ground chicken is very soft. You can also use Panko. For a low carb, gluten free substitution, you can use almond flour, or this Nut Free Keto Breading Recipe

    How to make Greek Chicken Meatballs - This is as simple as mix, bake, enjoy! You've gotta love any recipe that has minimal ingredients and can be on the table in no time flat.

    Step by step instructions

    STEP 1. Add the chicken, garlic, egg, breadcrumbs, feta, onion, parsley, mint, dill, oregano, lemon zest, salt and pepper to a large mixing bowl.

    STEP 2. Mix until all ingredients are well combined.

    STEP 3. Roll the mixture into 20 equal sized meatballs, about 1 - 1 ½ inches in diameter. Place the meatballs on the prepared baking sheet or baking dish.

    STEP 4. Bake for 20 minutes, or until lightly browned and cooked through.

    Recipe tips and variations

    • Mix up the meat - Instead of ground chicken, you can also make these with ground beef, ground, pork, ground lamb, or any combination of the three.
    • Serving - These Greek Chicken Meatballs are amazing served with a simple tomato salad - tomato, cucumber, red onion, oil, vinegar, salt and pepper. They are also delicious with this Prosciutto, Peach, and Melon Salad. I like to pair them with a fresh made Tzatziki sauce and fresh pita.
    • Storage - Store these in an airtight container in the fridge for up to 3 days. Alternately, you can freeze the leftovers for reheating later.
    • Reheating - If you are reheating these from frozen, I recommend baking them in the oven at 350°F until defrosted and warmed all the way through.

    Frequently asked questions

    Do you have to use breadcrumbs to make meatballs?

    You can definitely make meatballs without breadcrumbs, but they help to bind the meatballs together. Without some sort of binder, they may not hold their shape. Alternately, you can use almond flour, crushed pork rinds, or even a little finely grated parmesan cheese.

    What should I serve with Greek Meatballs?

    I like to serve them with fresh pita, cucumber and tomato salad, and tzatziki sauce.

    How to make baked apples

    Apple season is here and it's a great time to enjoy this fall favorite. Core two apples and brush with mixture of butter, pumpkin spice and the sweetener of your choice. Next, bake at 350°F for 30 minutes and gather all of your toppings. Once the apples come out of the oven, pile those toppings on and ENJOY! It's like eating your own personal size gluten free apple pie.
