    Ingredients in Cream Cheese Keto Chocolate Truffles

    • Chocolate: For these chocolate cream cheese truffles you can use chocolate chips, or you can use a chopped up chocolate bar. You can use dark chocolate, semi-sweet, or even milk chocolate. (Try these Chewy Marshmallow Chocolate Chip Cookies)
    • Cream cheese: I recommend using a full-fat cream cheese for these keto truffles. You could also use mascarpone cheese. For a dairy free alternative, you can use a nut based cream cheese like Kite Hill. (Try this Pumpkin Cheesecake Mousse)
    • Unsweetened cocoa powder: You want to make sure that you are using just plain, unsweetened cocoa powder and not hot chocolate powder. (Try this Chocolate Banana Bread Recipe)
    • Liquid stevia: Liquid stevia is highly concentrated and a little goes a long way.
    • Coconut flour: The coconut flour adds some body and structure to these keto chocolate truffles. It can be omitted, but the truffles will be softer and may need to be put in the freezer to set. (Try these Keto Chocolate Chip Cookie Dough Bites)
    • Vanilla extract: Skip the imitation stuff and go with pure vanilla extract. You can also use almond extract, maple extract, caramel extract or even orange extract.

    Step By Step Instructions for Keto Truffles

    STEP 1: Melt the chocolate in the microwave for 60 seconds. Alternatively, you can use a double boiler. Combine the melted chocolate with the cream cheese.

    STEP 2: Add the vanilla extract.

    STEP 3: Add the liquid stevia. Mix until all ingredients are well incorporated and smooth

    STEP 4: Add the cocoa powder and coconut flour, and mix until well combined.

    STEP 5:  Fold in the chopped walnuts. Refrigerate for at least an hour to let chill and stiffen.

    • 1 cup chopped walnuts
    • 2 tablespoons coconut flour (I use this brand)

    • shredded coconut, for garnish (I use this brand)

    Instructions
