STEP 1: Whisk together the fajita seasoning, 1 tablespoon of the olive oil and two tablespoons of water in a large mixing bowl. Add the chicken to the bowl and toss until the chicken is evenly coated in the seasoning mix.
STEP 2: Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken to the pan and cook until it is cooked all the way through and is no longer pink, about 8 minutes.

Ingredients
- 1 package of fajita or taco seasoning (4 tablespoons)
- 2 tablespoons of olive oil, divided
- 4 chicken breasts (about 1 pound) cut into thin strips
- 3 cups cooked white rice
- 2 cups shredded romaine lettuce
- 1 (15-oz) can black beans, rinsed and drained
- 1 (15-oz) can sweet corn, drained
- ½ red onion, diced
- 2 Roma tomatoes, seeded and diced
- 1 avocado, pitted and diced
- 1 lime, cut into wedges
- ⅓ cup sour cream
- chopped cilantro, optional for garnish
