    Ingredient Notes

    • Cream Cheese: I recommend using full-fat cream cheese for this recipe. For a dairy free cheesecake version, you can use a nut based dairy free cream cheese. (Try these Cream Cheese Chocolate Truffles)
    • Heavy Cream: The heavy cream in this recipe is used to make fresh whipped cream to fold into the keto cheesecake mix. It gives it a nice light and airy texture. For a dairy free alternative, you can use a canned, full-fat coconut milk.
    • Cocoa Powder: For this keto chocolate mousse recipe, you will need an unsweetened cocoa powder, not to be confused with hot cocoa mix, which has added sugars.
    • Sweetener: For this recipe I use a mixture of erythritol and monk fruit sweetener. (This is the brand I use) It has no weird after taste or cooling effect. However, you can use any low carb sweetener that you prefer. (Try these Keto Chocolate Chip Cookie Dough Bites)
    • Vanilla Extract: I recommend using a good quality pure vanilla extract and not an imitation extract. This is also delicious with caramel extract or even almond extract.
    • Almond Flour: The almond flour is used to make a low carb and gluten free graham cracker like crust for these keto chocolate cheesecake cups. I recommend using blanched almond flour. (This is the brand I use)

    STEPS 1 - 4: Making the chocolate crust: In a large mixing bowl, combine the almond flour, sweetener, cocoa powder and melted butter. Mix until well combined. Divide evenly among 6 serving dishes. Refrigerate while you prepare the cheesecake.

    STEPS 5-8: Making the keto chocolate cheesecake batter: Add the cream cheese to a large mixing bowl. Using an electric hand mixer, beat until creamy. Stir in the sweetener, cocoa powder and vanilla extract and mix to combine.

    STEPS 9-12: Making the keto whipped cream and putting it all together: In a separate mixing bowl, whip the heavy cream until it has stiff peaks. Gently fold the whipped cream into the cream cheese mixture until well combined. Divide the cream cheese mixture evenly among the 6 prepared cups. Refrigerate for 1 to 2 hours to chill before serving. Garnish and enjoy!

    • Storage: Store leftover Keto Chocolate Cheesecake recipe in the fridge for up to 5 days.
    • Make it dairy free: You can make this dairy free by swapping out the cream cheese for a nut based cream cheese, the butter for butter flavored coconut oil, and the heavy cream for a canned full fat coconut milk. Make sure that you store the coconut milk in the refrigerator for up to 24 hours before using. 
    • Toppings: You can top this low carb chocolate cheesecake with fresh fruit, frozen fruit, whipped cream, melted chocolate, sugar free chocolate chips, nuts, shaved coconut, low carb cookies, you name it!
    • Cream cheese: Let the cream cheese soften at room temperature for a smooth and silky texture.
    • Peanut Butter: Mix in a little peanut butter make this a keto chocolate peanut butter cheesecake.

    Description

    Ingredients

    For the crust

    • 1 cup blanched almond flour (I use this brand)
    • 2 tablespoons melted butter or butter flavored coconut oil
    • 3 tablespoons powdered sweetener (code PEACE for 15% off)
    • 2 tablespoon unsweetened cocoa powder

    For the Chocolate Cheesecake

    • 16 ounces cream cheese, softened 
    • ½ cup powdered sweetener
    • 1 teaspoon vanilla extract
    • 3 tablespoon unsweetened cocoa powder 
    • 1 cup heavy cream

    Optional Garnishes

    • Mixed berries
    • Chocolate chips
    • Whipped cream
    • Nuts


    Instructions

    1. In a large mixing bowl, combine all of the ingredients for the base. Mix until well combined. Divide evenly among 6 serving dishes. Refrigerate while you prepare the cheesecake.
    2. Add the cream cheese to a large mixing bowl. Using an electric mixer, beat until creamy. Add the sweetener, cocoa powder and vanilla extract and mix to combine.
