    This Peach Burrata Salad Recipe is fresh and light, making it the perfect summer salad recipe. Sweet, ripe peaches, paired with creamy burrata, herbaceous basil, and spicy jalapeños, then drizzled with olive oil and balsamic glaze is a match made in heaven.     Ingredients in Peach Burrata Salad

    • Peaches: For this recipe, you want fully ripe and ready to eat sweet peaches. If you take my suggestion below about grilling the peaches, you will want to them firm, but still ripe. (Try this Peach, Prosciutto and Melon Salad)
    • Burrata cheese: Fresh burrata is so rich and creamy. It has a solid outer shell and the inside is a delicious soft curd.
    • Basil: Fresh herbs and fruit are a match made in heaven. If you do not have basil, chives, mint, or parsley would all be great as well.
    • Jalapeños: The jalapeños add a nice spicy element to balance out the sweetness of the peaches and the balsamic glaze. (Try this Jalapeño Popper Stuffed Chicken)
    • Balsamic glaze: Balsamic glaze is a reduction of balsamic vinegar. It still has that bright tartness but it a lot sweeter. If you do not have balsamic glaze, you can drizzle over some regular balsamic vinegar or even honey. Better yet, try adding both of them. You can also use this Balsamic Shallot Vinaigrette Recipe.

    How to make Peach and Burrata Salad

    Step By Step Instructions

    STEP 1: Add the sliced peaches to a large serving bowl.
    STEP 2: Tear pieces of the burrata and spread over top of the peaches.
    STEP 3: Drizzle over the balsamic glaze and olive oil. 
    STEP 4: Top with basil and jalapeños and sprinkle with salt and pepper, to taste. 

    Recipe Tips and Variations

    • Storage: Store leftover peach burrata salad in the refrigerator for up to 3 days.
    • Grill the peaches: Grilling the peaches makes them even softer and juicier and really takes this salad to the next level. To grill the peaches, place them directly on the grill grates and grill for 3 to 4 minutes on each side, or until lightly charred with grill marks.
    • Add prosciutto: This peach and burrata salad is also excellent with some thinly sliced prosciutto added. It adds a nice saltiness against the sweet and spicy flavors of the salad.
    • Add tomatoes: cherry tomatoes or grape tomatoes make a great addition to this salad.
    • Add melon: This is also delicious with some melon added - cantaloupe, honeydew, or even watermelon. (Try this Cantaloupe and Prosciutto Salad)
    • Add berries: Toss in a handful of fresh strawberries, raspberries, blueberries, or even blackberries.
    • Change up the cheese: In place of the burrata you can also use fresh mozzarella cheese, cottage cheese, feta, or even mascarpone.

    How do you grill peaches?

    Grilling peaches makes them even softer and juicier and really takes your dish to the next level. To grill peaches, slice them and remove the pit, and then place them directly on the grill grates and grill for 3 to 4 minutes on each side, or until lightly charred with grill marks.

    • 3 ripe peaches, pitted and sliced into sixths
    • 8 ounces fresh burrata
    • 3 tablespoons balsamic glaze (I use this brand)
    • 2 tablespoon olive oil 
    • handful fresh basil leaves
    • 1 small jalapeño, seeded and thinly sliced
    • sea salt and black pepper, to taste

    Instructions

    1. Add the sliced peaches to a large serving bowl.
    2. Tear pieces of the burrata and spread over top of the peaches
