Description

These Chicken Burrito Bowls are the perfect addition to your Taco Tuesday routine. It is a delicious and nutritious Chipotle copycat. Perfectly spiced, juicy chicken breast, steamed rice, beans, fresh veggies, lime juice, and cooling sour cream. These chicken taco bowls are fresh, light and completely customizable. Simply pile on all your favorite burrito or taco fillings.


Ingredients

  • 1 package of fajita or taco seasoning (4 tablespoons)
  • 2 tablespoons of olive oil, divided
  • 4 chicken breasts (about 1 pound) cut into thin strips
  • 3 cups cooked white rice
  • 2 cups shredded romaine lettuce
  • 1 (15-oz) can black beans, rinsed and drained
  • 1 (15-oz) can sweet corn, drained
  • ½ red onion, diced
  • 2 Roma tomatoes, seeded and diced
  • 1 avocado, pitted and diced
  • 1 lime, cut into wedges
  • 1/3 cup sour cream
  • chopped cilantro, optional for garnish


Instructions

  1. Whisk together the fajita seasoning, 1 tablespoon of the olive oil and two tablespoons of water in a large mixing bowl. Add the chicken to the bowl and toss until the chicken is evenly coated in the seasoning mix. 
  2. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken to the pan and cook until it is cooked all the way through and is no longer pink, about 8 minutes.
  3. Assemble the burrito bowls by dividing the rice, lettuce, beans, corn, onion, tomatoes and avocado evenly among four bowls. 
  4. Top each one with some chicken, a squeeze of lime juice, sour cream, and cilantro, if using. 

Notes

  • Storage: I recommend storing each individual ingredient separately. Then when you are ready to eat the leftovers, you can reheat the chicken and assemble the burrito bowls. 
  • Change up the protein: These chicken burrito bowls are also delicious made with beef, shrimp, pork, or even fish. 
  • Make it low carb: To make these low carb burrito bowls you only need to make a few simple changes. Swap the rice for this Cilantro Lime Cauliflower Rice. Swap the beans for black soy beans or omit them altogether. Omit the corn, or swap it out for another one of your favorite low carb vegetables like sautéed bell peppers, mushrooms, or caramelized onions.
